




Rosé veal
Since its foundation in 1993, DCA Production has been involved in boning veal. Since the definition of veal was changed in 2008, DCA has become ever more specialised in boning rosé veal under 8 months of age. Long before the legislative change on 1 July 2008, DCA realised that there was a market for this quality of veal and that it was in danger of disappearing because of the age limit, which had been lowered from 12 to 8 months.
In consultation with some forward-thinking fattening farms, they planned to have rosé fattened calves less than 8 months old also available from 1st of July 2008. In the first instance the availability of these calves varied strongly, but thanks to the persistence of both the fattening companies and DCA, a new product (segment) was gradually added to the market. Rosé veal, from calves under 8 months of age, sometimes called young rosé, has now become a generally accepted and appreciated quality, and in the course of time a special designation has been created for it. In addition we can now see that the lowering of the age limit to 8 months guarantees a better and more consistent end product.
